Popovers

1. GATHER INGREDIENTS
  • 1/2 c. whole milk
  • 1 large egg
  • 1/2 c flour
  • 1/8 tsp salt
2. PREHEAT OVEN to 450F (need any more seasoning of pans??)

3. MIX
  • Pour 1/2 c milk into bowl or 2 c measuring cup
  • crack in one egg
  • beat with wire whisk
  • add salt and beat some more
  • measure 1/2 c flour and dumpy that in; whisking JUST until no clumps
  • let sit until oven is hot
4. CAST IRON
  • rub oil in muffin cups
  • when oven is preheated put it in the oven to heat for 5 minutes
  • when pan comes out of oven put a dab of butter in the bottom of each cup
  • pour in the batter, filling only half-way (don’t overfill or they won’t pop correctly)
5. COOK
  • put pan of batter into oven
  • cook for 15 minutes at 450 and then….
  • lower temp to 350F (DO NOT OPEN OVEN) and bake for another 15 minutes
    • note: the minis are done in less time << watch carefully
  • remove from oven AND PIERCE THEM to let the air/moisture out
