the following recipes are some of our family favourites!

Great-Grandma Banks’ Fruit Cake (and my wedding cake)
  1. flour the following (using 1.5 c flour)
    1. 5 lb seedless raisins
    2. 1 lb fruit peel
    3. 1 lb maraschino cherries (half red and half green
    4. 1 lb walnuts or blanched almonds
  2. Mix (separate bowl)
    1. 1 lb butter
    2. 1 lb brown sugar
    3. add in 10 eggs and stir well
  3. Add to the butter/sugar
    1. 1/2 c molasses (for dark fruit cake; omit if you want light colour)
    2. 1 tsp almond extract
    3. 1 tsp orange extract
    4. mix well
  4. Mix fruit and butter mixtures together
  5. Line cake pans with several thicknesses of wax paper
    1. Add mixture to pans
    2. bake 270F for 3.5 hours (small pan); 4 hours (medium pan) 4.5 hours (large pan)
  6. As soon as you remove from oven, remove the wax paper; cool
  7. When cold; wrap in wax paper and store in covered crock.

Great-Grandma Banks’ Carrot Pudding
  1. Mix the following:
    1. 1.5 c flour
    2. 1 c white sugar
    3. 1 c chopped suet
    4. 2 c dark seedless raisins
    5. 1 c grated potatoes
    6. 1 c grated carrots
    7. tsp baking soda
  2. Steam for 2.5 hours
  3. Cool; wrap and store in covered tin or crock, in a cool place
  4. when ready to use, re-steam for .5 hours or until hot

Caramel Sauce
  1. Mix
    1. 6 tbsp brown sugar
    2. 1 tsp flour
    3. pinch salt
    4. 1 tbsp butter
  2. cook, stirring, do not burn !!!!!!
  3. add some boiling water (no idea how much)
  4. cook till thickened
  5. remove from heat
  6. add .5 tsp vanilla


Grandpa Roswell’s Pumpkin Pie

Note: use fresh pumpkin OR canned ED SMITH pumpkin << true pumpkin!
The canned pumpkin is about 3 cups so you can make 2 pies or 1 pie and 12 tarts

Mix
1.5 c cooked pumpkin
1 c white sugar
1 tbsp flour
1/2 tsp ginger
1/2 tsp nutmeg
1 tsp cinnamon
1/4 tsp mace
1/3 tsp salt
3 large eggs, beaten well
1/2 c milk

Pour into pastry shell
Bake 350F for 35-45 min (til tester comes out clean - not wet with pumpkin!)


Ripe Cucumber Relish
  1. remove the seeds from 12 large ripe cucumbers
  2. peel 4 large onions
  3. chop to "relish" consistency: cucumbers and onions
  4. sprinkle with .5 c pickling salt and cover with water
  5. let stand 1 hour and then drain well
  6. Bring to boil:
    1. 4 c cider vinegar
    2. 4 c sugar
    3. add cheesecloth bag of:
      1. 1.5 tsp mustard seed
      2. 1.5 tsp dry mustard
      3. .5 tsp ground cloves
      4. .5 tsp ground cinnamon
      5. 1.5 tbsp ground turmeric
  7. Add vegetables and cook SLOWLY until tender
  8. Remove spices;
  9. pack in sterilized jars and seal

Lady Ross Relish
  1. chop
    1. 8 c cucumbers, without seeds
    2. 8 c onions
    3. 1 large cauliflower
    4. 3 green sweet peppers
    5. 3 red sweet peppers
  2. sprinkle on: .5 c pickling salt. Mix and let stand overnight
  3. in the morning: drain thoroughly
  4. in a large kettle: mix
    1. 8 c brown sugar
    2. 6 c white wine vinegar
    3. 4 tbsp mustard seed (tied in a bag)
    4. .5 c dry mustard
    5. 3 tsp turmeric
  5. Bring to boil
    1. blend .5 c flour with water to make a paste
    2. stir into the boiling mixture
  6. Add vegetables
  7. bring to boil again and simmer 10 minutes
  8. pour into hot sterilized jars and seal
  9. makes 6 quarts

Betty (Morley) Roswell’s Pickled Beets
  1. cook beets; cool; skin
  2. Make syrup of:
    1. 5 c white wine vinegar
    2. 5 c sugar
    3. 1.5 c water
    4. 1 tsp salt
  3. pack beets in sterilized jars; pour syrup to cover;
  4. seal jars

Beulah McInally’s Banana Bread / Cake
  1. Beat 2 eggs;
    1. add 1.5 c white sugar
    2. .5 c butter
    3. .5 c walnuts
  2. Add 2 mashed (ripe) bananas
    1. add 1 tsp baking soda dissolved in 1 tbsp water
    2. 4 tbsp milk
    3. 1 tsp vanilla
  3. Add 1.5 c flour
  4. Pour into greased pan
  5. cook 350F for approx 1 hour ("until done")

GG’s Doughnuts
  1. Cream
    1. 2.5 tbsp butter
    2. .5 c sugar
  2. beat 3 eggs till very light
  3. add .5 c sugar and beat well
  4. add 1 c milk
  5. add
    1. 3.5 c flour
  6. sift together the spices and add to flour
    1. 1 tsp salt
    2. 4 tsp baking powder
    3. .25 tsp cinnamon
    4. .25 tsp nutmeg
  7. add enough flour to make dough stiff enough to roll
  8. put .33 of mixture on floured board; roll to .25 inch thick
    1. cut with doughnut cutter
    2. fry in deep fat 350F - 400F
    3. turn just once
    4. when brown remove from fat; drain on brown paper;
    5. roll in icing sugar if desired
      1. (note: we used a brown paper bag and shook it… kids’ job)


Great-Grandmother Almas’ Sugar Cookies
  1. Cream together
    1. 2 c brown sugar
    2. 1 heaping cup of shortening
  2. break 2 eggs in a cup and stir with a fork
    1. fill cup with sour cream or milk (with 1 tbsp of vinegar to "sour")
  3. dissolve 1 tsp baking soda in a tsp of water
  4. stir in 4 c flour
  5. roll out on floured board (quite thick)
  6. cut out with a (large) FRUIT JAR RING <<< the old fashioned ones -or it doesn’t taste the same.. honest
  7. sprinkle generously with white sugar
  8. bake till lightly brown
  9. note: apparently some people hate them (can’t imagine) or they love them!

Great-Aunt Vera Roswell’s Chili Sauce
  1. scald and peel 12 quarts ripe tomates
    1. cut into small pieces
  2. add
    1. 8 medium onions
    2. 2 sweet green peppers
    3. 2 sweet red peppers
    4. 2 handfulls pickling salt
    5. .5 tsp celery seed
    6. 2 c cider vinegar
  3. boil until almost thick
  4. Add 8 c brown sugar
  5. boil until required thickness
  6. bottle in sterilized jars

Chicken Paprikas
  1. coat 3 lb chicken pieces with flour
  2. melt 2 tbsp butter in large frypan
  3. brown chicken and remove from pan
  4. saute
    1. 1 c finely chopped onion
    2. 1 minced garlic clove
  5. stir in
    1. 1 tbsp or more paprika
    2. 1 tsp salt
    3. .5 c water
    4. 2 chicken bouillon cubes
  6. return chicken to pan
    1. cover and simmer 30 min
  7. remove to platter; keep warm
  8. smoothly combine
    1. 3 tbsp flour
    2. 1 c mil,
    3. stir into juices and thicken
  9. blend in 1 cu sour cream and heat through
  10. pour over chicken and serve with hot cooked noodles

Csoroge
  1. mix
    1. 6 egg yolks slightly beaten
    2. 1 tsp salt
    3. 2 tbsp sugar
    4. 1 tsp vanilla
  2. add enough flour to make a stiff dough (just beyond yellow gooey)
  3. knead on floured board for 10 minutes
  4. roll quite thin
  5. cut into squares;
    1. make a slash and pull ends through = angel wings
  6. deep fry till lightly grown
  7. drain and sit with icing sugar

Mother Pucker Pie
  1. mix
    1. 1 can condensed milk
    2. 2/3 c lemon juice
    3. 1.25 c crushed walnuts
    4. 10 oz can drained crushed pineapple
    5. small container of cool whip
  2. fold together and put on a graham cracker crust
    1. 1 pkg crushed graham crumbs
    2. .25 c melted butter
    3. .5 c (?) brown sugar
  3. fridge 1 hour

Pastry
  1. mix
    1. 1 3/4 c flour
    2. 3/4 tsp salt
  2. cut in: 3/4 c lard
  3. sprinkle in 4-5 tbsp COLD water; one at a time
  4. gently mix till dough comes clean from the bowl

Apple Pie
  1. peel/core/cut
    1. 6 c apples
  2. combine
    1. 1 c sugar
    2. .5 tsp cinnamon or nutmeg
    3. pinch salt
  3. place half the apples into pie shell; then half the spices; then rest of apples and rest of spices; heaping it all in the centre
  4. dot with 1 tbsp butter
  5. cover with top pie shell; flute; slash top
  6. bake 450F for 15 min
  7. reduce heat to 350F bake 45 min

Coconut Pastel BonBons
  1. beat 3 oz cream cheese
  2. gradually add 2.5 c icing sugar
  3. beat in
    1. .25 tsp vanilaa
    2. dash salt
    3. food colouring
  4. fridge 1 hour
  5. shape into balls
  6. roll in coconut
  7. fridge several hour

Baked Beans
  1. 2 large cans brown beans
  2. add
    1. 1 tsp dry mustard
    2. .25 c ketchup
    3. .75 c molasses
  3. put 3 slices bacon on top
  4. bake until bacon is done

NagyMama’s Cucumber Salad
  1. thinly slice 2 large, peeled, cucumbers
  2. add thinly sliced onion
  3. sprinkle with 1 tbsp salt and let stand for 20 minutes
  4. squeeze out the liquid
  5. place in dish and cover with vinegar plus 1 tbsp paprika

Cabbage Rolls (my version) << Joe always said mine were the best he’s ever had!!! 💞
  1. mix
    1. 1.5 lb hamburg
    2. 2 tsp salt
    3. 1 tbsp paprika
    4. .5 tsp pepper
    5. .5 tsp onion powder
    6. .5 tsp garlic powder
    7. some minute rice
    8. 1 large onion minced
  2. core cabbage and boil til able to pull of leaves
    1. trim vein
    2. add some meat mixture; (1 tbsp?)
    3. roll
  3. place in large pot
    1. cover with 2/3 tomato juice and 1/3 water
  4. cook slowly 1.5 hour - 3 hours
  5. serve with sour cream
(Note: "slop": all of the above ingredients without rolling .. chop the cabbage)

Tomato - Onion Sambal
  1. skin and dice 3 firm red tomatoes
  2. add
    1. 1 chopped onion
    2. 1 clover garlic crushed (or garlic salt)
    3. 1/4 c oil
    4. 2 tbsp vinegar (or lemon juice)
    5. dash of tabasco sauce (or cayenne powder)
    6. dash of chili powder
    7. salt
  3. toss lightly to mix
  4. serve well chilled

Potato Jacks
  1. mix
    1. 3 c grated raw (or cooked mashed) potatoes
    2. 1 tbsp salt
    3. dash pepper
    4. 1 egg
    5. 1.5 c flour
  2. flatten
  3. fry in 1/4 c fat ; on both sides till brown
  4. place on paper towel; salt

Potato Soup
  1. melt 1 tbsp butter
  2. add and cook for 3 minutes: 1 tbsp flour
  3. add gradually: 2 c milk, till thick
  4. add
    1. onion salt
    2. salt
    3. pepper
    4. celery salt
    5. cayenne
    6. parsley
  5. stir in 1 c pureed cooked potatoes
  6. heat

Ham Slices with Horseradish Glaze
  1. bring to boil
    1. 1 c brown sugar
    2. .25 c lemon juice or vinegar)
    3. 1/3 c horseradish
  2. pour over ham slices / cottage roll
  3. grill 15 - 20 minutes

Zippy Franks
  1. melt
    1. 10 oz jar of currant jelly
    2. .5 c mustard
    3. 1 tbsp plus of horseradish
  2. great as a sauce over weiners or any meat

Pribele Pork
  1. arrange 4 pork chops in large casserole dish
  2. add: 6 potatoes cut into quarters
  3. cook .5 hours at 350F
  4. add
    1. 1 green and 1 yellow pepper cut into quarters
    2. 4 slices onion
  5. mix
    1. dip and serve barbecue mix
    2. 3 tbsp ketchup
    3. 3 tbsp brown sugar
    4. 1 tsp worcestershire sauce
    5. bake 1 hour
  6. quarter tomato and place in centre
    1. bake 10 minutes more

Bread & Butter Pickles
  1. Combine
    1. 16 c thinkly sliced cucumbers
    2. 1/2 c pickling salt
    3. 8 c sliced onions
    4. cover with ice cubers/water
    5. let stand 3 hours till crisp
    6. drain
  2. in kettle, mix
    1. 4 c white vinegar
    2. 5 c sugar
    3. 1 tbsp celery seed
    4. 2 tbsp mustard seed
    5. 1.5 tsp turmeric
    6. .5 tsp white pepper
  3. bring quickly to boil and boil 10 minutes
  4. add cukes and bring back to boil
  5. pack at once in jars and seal; 5 pints

Glena Bowman’s Icicle Pickles <
  1. cut
    1. 2 (6 quart) baskets of cucumbers, lengthwise
    2. bring to boil
      1. 2 c pickling salt and 1 gallon water
      2. cover pickles
  2. let stand 7 days
  3. drain
  4. wash off with clean water
  5. pour boiling water over cakes and let stand 1 day
  6. drain
  7. dissolve
    1. 3 tbsp alum in boiling water
    2. pour over cakes and let stand 1 day
    3. drain
  8. syrup
    1. 10 c white sugar
    2. 10 c white vinegar (or cider)
    3. 1 large handful pickling spices (tied in bag)
    4. green food colouring
  9. bring to boil and pour over pickles
    1. for next 3 days; add 2 c sugar to syrup and re-boil
      1. pouring over pickles again
  10. pour over pickles 4 mornings; bringing to boil each time
  11. pickles;: pack in jars on 4 thd day;
    1. pour hot syrup over and seal

Six Layer Dinner
  1. combine
    1. 2 c shredded carrots
    2. 1 green pepper chopped
  2. layer
    1. 2 c sliced potatoes
    2. 1/2 c raw brown rice
    3. 1 c sliced onions
    4. 1.5 lb lean hamburg
    5. the carrots/pepper
    6. 1/3 c wheat germ
    7. seasoning: salt and papper
  3. bake covered 2.5 hours at 325F

Tea Biscuits
  1. mix
    1. 2 c flour
    2. 4 tsp bkg powder
    3. 1 tsp salt
    4. 1/4 c shortening
  2. add 1 c milk
  3. bake 15 minutes at 450F

Apple Cookies
  1. mix
    1. 1.5 c sugar
    2. .5 c shortening
    3. 1 egg
    4. 1 tsp vanilla
    5. 2 c flour
    6. 1 tsp baking powder
    7. 1 tsp bkg soda
    8. 1 c grated apples packed (3 medium apples)
  2. make 2" balls;
  3. dip in (not roll):
    1. 1/2 c sugar
    2. 1 tsp cinnamon
  4. bake 350F for 12 minutes (soft)

Joey & Karla’s Pesto Toasties (I forget the original recipe .. help me out guys!)
  1. mix
    1. 1 package cream cheese
    2. chopped onion
    3. pesto
  2. slice baguette into slices
  3. spread with cheese mixture
  4. broil til toastie
